Enerzijds om de enzymen, die&amp;nbsp;&lt;br /&gt;hun werk gedaan hebben, te elimineren en om het brouwsel te steriliseren, anderzijds om&amp;nbsp;&lt;br /&gt;door indamping de gewenste concentratie van het wort te krijgen. Door het koken van de&amp;nbsp;&lt;br /&gt;wort scheiden tevens de eiwitten zich af. Een teveel aan eiwitten is nadelig voor de&amp;nbsp;&lt;br /&gt;houdbaarheid, kwaliteit en smaak van het bier. Tijdens het koken wordt het hop&amp;nbsp;&lt;br /&gt;toegevoegd. Deze geeft het bier een bittere smaak. De hop bevordert ook de afscheiding&amp;nbsp;&lt;br /&gt;van de eiwitten. Bovendien is hop een belangrijk ingredi&amp;euml;nt door zijn conserverende&amp;nbsp;&lt;br /&gt;werking in het bier. Na het koken noemen we de vloeistof 'gehopt wort'. De hopbloem&amp;nbsp;&lt;br /&gt;werd vroeger in balen aangeleverd bij de brouwerijen. Om het hopbloemextract te&amp;nbsp;&lt;br /&gt;verkrijgen werd de bloem uitgeperst. Later beschikte men over hopbloemextract in&amp;nbsp;&lt;br /&gt;poedervorm. Door middel van het gebruik van een meetlat kon men vaststellen of het bier&amp;nbsp;&lt;br /&gt;klaar was. Het bier moest tot een bepaalde hoogte stijgen om te kunnen bepalen of het&amp;nbsp;&lt;br /&gt;bier gereed was&lt;/p&gt;</text>

Der&amp;nbsp;&lt;br /&gt;Hopfen. f&amp;ouml;rdert &amp;uuml;berdies die Eiwei&amp;szlig;absonderung. Des weiteren ist er auch wegen seiner&amp;nbsp;&lt;br /&gt;konservierenden Eigenschaften eine wichtige Zutat f&amp;uuml;r das Bier. Nach dem Kochen haben wir&amp;nbsp;&lt;br /&gt;die eigentliche W&amp;uuml;rze erhalten.&lt;br /&gt;Der Hopfen wurde fr&amp;uuml;her in Ballen bei der Brauerei abgeliefert. Um das Lupulin freizusetzen,&amp;nbsp;&lt;br /&gt;wurden die Hopfendolden ausgepre&amp;szlig;t. In j&amp;uuml;ngerer Zeit arbeitet man mit Lupulin in&amp;nbsp;&lt;br /&gt;Pulverform, dem sog. Hopfenmehl.&amp;nbsp;&lt;br /&gt;Mit einer Me&amp;szlig;stange konnte man feststellen, ob das Bier fertig war. Es mu&amp;szlig;te bis auf eine&lt;br /&gt;bestimmte H&amp;ouml;he ansteigen, um feststellen zu k&amp;ouml;nnen ob die G&amp;auml;rung abgeschlossen war.&lt;/p&gt;</text>

After boiling we call the liquid "hopped&amp;nbsp;&lt;br /&gt;wort". In former days the hop blossom was delivered to breweries in bags. To obtain&amp;nbsp;&lt;br /&gt;the hop extract the flowers were pressed. Later on hop extract was available as a&amp;nbsp;&lt;br /&gt;powder.&amp;nbsp;&lt;br /&gt;With the help of a measuring rod the brewer could determine whether a brew was&amp;nbsp;&lt;br /&gt;ready. The beer had to rise to a certain level, before it was possible to decide if a&amp;nbsp;&lt;br /&gt;brew was ready.&lt;/p&gt;</text>
