            <text>&lt;p&gt;Voor het gisten van het bier is een lage temperatuur nodig, vari&amp;euml;rend tussen de 6 en 25&amp;nbsp;&lt;br /&gt;graden Celsius. Het wordt daarom na het koken gekoeld. Voor een zo snel mogelijke&amp;nbsp;&lt;br /&gt;koeling brengt de brouwer de wort over naar grote lage koelbakken. Tevens kan het wort&amp;nbsp;&lt;br /&gt;op deze manier voldoende zuurstof opnemen voor het gistingsproces. De wort werd&amp;nbsp;&lt;br /&gt;gekoeld met natuurijs. Als gevolg hiervan was de productie afhankelijk van de seizoenen. In&amp;nbsp;&lt;br /&gt;strenge winters schepten de brouwers het ijs van de rivieren en grachten. Bij zwakke&amp;nbsp;&lt;br /&gt;winters was men gedwongen het ijs uit Noorwegen in te voeren, wat uiteraard weer hoge&amp;nbsp;&lt;br /&gt;kosten met zich meebracht. Door invoering van de kunstmatige koeling werd&amp;nbsp;&lt;br /&gt;schaalvergroting mogelijk. De juiste temperatuur wordt bereikt, doordat de hete wort&amp;nbsp;&lt;br /&gt;langs de koude buizen stroomt. [zie foto] De reden dat de muren van de koelkelder zo&amp;nbsp;&lt;br /&gt;afwijkend van vorm zijn, is dat het condenswater niet terug mag vallen in het bier. Het&amp;nbsp;&lt;br /&gt;condenswater krijgt zo de kans langzaam naar beneden te druppelen om vervolgens naast&amp;nbsp;&lt;br /&gt;de koelbak terecht te komen.&lt;br /&gt;Het condenswater stroomt langzaam langs de muren naar beneden, zonder&amp;nbsp;&lt;br /&gt;dat het in het bier terecht komt.&amp;nbsp;&lt;br /&gt;Binnen twee uur is de wort afgekoeld tot de gewenste temperatuur van 7 graden.&amp;nbsp;&lt;/p&gt;</text>

Zur&amp;nbsp;&lt;br /&gt;K&amp;uuml;hlung der W&amp;uuml;rze benutzte man fr&amp;uuml;her Natureis. Infolgedessen war die Bierproduktion van&amp;nbsp;&lt;br /&gt;den Jahreszeiten abh&amp;auml;ngig. In strengen Wintern schnitten und s&amp;auml;gten die Brauer das Eis von&amp;nbsp;&lt;br /&gt;den Fl&amp;uuml;ssen und Grachten. In milderen Wintern war man gezwungen, das Eis aus Norwegen&amp;nbsp;&lt;br /&gt;einzuf&amp;uuml;hren, was selbstverst&amp;auml;ndlich mit hohen Kosten verbunden war. Dank der Einf&amp;uuml;hrung&amp;nbsp;&lt;br /&gt;der k&amp;uuml;nstlichen K&amp;uuml;hlung waren betr&amp;auml;chtliche produktions-steigerungen m&amp;ouml;glich. Um die&amp;nbsp;&lt;br /&gt;w&amp;uuml;rze auf die richtige Temperatur abzuk&amp;uuml;hlen, wird sie an K&amp;uuml;hlschlangen entlanggef&amp;uuml;hrt.&amp;nbsp;&lt;br /&gt;(Siehe Foto) Auffallend ist die abweichende Form der Kellerw&amp;auml;nde. Auf diese Weise soll&amp;nbsp;&lt;br /&gt;verhindert werden, da&amp;szlig; das Kondenswasser in das Bier zur&amp;uuml;ckflie&amp;szlig;t. Dank dieser Form der&amp;nbsp;&lt;br /&gt;Kellerw&amp;auml;nde kann das Kondenswasser langsam nach unten laufen, um anschlie&amp;szlig;end neben&amp;nbsp;&lt;br /&gt;dem K&amp;uuml;hlbottich aufgefangen zu werden.&amp;nbsp;&lt;br /&gt;Das Kondenswasser str&amp;ouml;mt langsam an den Mauern nach unten, ohne das es in das Bier&amp;nbsp;&lt;br /&gt;gelangt.&amp;nbsp;&lt;br /&gt;Die W&amp;uuml;rze ist innerhalb von zwei stunden auf die gew&amp;uuml;nschte Temperatur von 7&amp;deg;C abgek&amp;uuml;hlt.&lt;/p&gt;</text>

The right temperature&amp;nbsp;&lt;br /&gt;is reached through the fact, that the warm wort trickles down the refrigerated pipes&amp;nbsp;&lt;br /&gt;(see picture). The reason for the oblique shape of the ceiling above the cool ships is,&amp;nbsp;&lt;br /&gt;that this position prevents the condensation water from falling back into the beer.&amp;nbsp;&lt;br /&gt;Now the water runs along the ceiling towards the wall and drips on the ground next&amp;nbsp;&lt;br /&gt;to the cool ship. After two hours of cooling the wort has reached the required&amp;nbsp;&lt;br /&gt;temperature of 7 degrees C.&amp;nbsp;&lt;/p&gt;</text>
